I've tried quite a few cross-bridge rice noodles in Mengzi. The most famous is the "Fire House" variety. The densely packed rice noodle shops along that street are truly memorable. I also tried the hotel version at the Ramada by Wyndham Mengzi, but I can't remember all the other smaller shops. While the "Chrysanthemum Cross-Bridge Rice Noodles" are probably the most popular and well-known in Mengzi, there's one place that's taken a different approach, creating the "Fragrant Lotus Cross-Bridge Rice Noodles." This "Hani Family" is located to the left of the main entrance to Mengzi Cross-Bridge Rice Noodle Town. It's easily visible, with its charming little bridges and flowing water, and the thatched roofs of the Hani mushroom houses—in short, it's very Hani. We happened to run into a film crew interviewing us, so a corner of the restaurant was temporarily "requisitioned." Watching the lighting and props being adjusted, with the restaurant's "Fragrant Lotus" sign prominently displayed, the atmosphere was instantly captivating. On each table, there's a single, or perhaps three or four, fragrant lotus flowers. This is a premium aquatic flower cultivated by Taiwanese people based on the American fragrant lotus. It comes in nine distinct color palettes, each one incredibly beautiful, and has even become the ceremonial flower of the Olympics. Cross-the-bridge rice noodles are incredibly ceremonial. Even after experiencing them countless times, such as at a house fire, and even if the basic 20-yuan dish is the only option, I still marvel at the opulence before me. No wonder it's called "a feast for one." First, add the raw meat, quail eggs, and vegetables, followed by the delicate white rice noodles and the more durable red rice noodles. After a short pause, while the seemingly silent chicken broth is boiling, the ingredients are cooked. Everyone in Mengzi knows that a bowl is best served around 10 a.m. to enjoy the most authentic broth. After 11-12 p.m., the restaurant will refill the broth. A large wooden soup spoon in your left hand and a pair of chopsticks in your right hand are the standard accompaniments for Cross-Bridge Rice Noodles. The broth is delicious, the ingredients fresh, and the melding of the three in your mouth is indescribable. This Cross-Bridge Rice Noodles dish is served with a yellow perfumed lotus flower, which has a subtle fragrance. The large petals also look beautiful after blanching, melting in your mouth with a sweet, refreshing taste. Mengzi is known as the "hometown of cross-bridge rice noodles," so much so that some say a trip to Mengzi without trying rice noodles is a complete waste. When in Rome, do as the Romans do. First stop: a Hani family in Rice Noodle Town. The hall was spacious, the breeze was refreshing, and it felt very comfortable. The long table was covered with an ethnic-style tablecloth. We chose the 20 yuan order, which came with 14 small plates beautifully arranged in a dustpan. A large bowl of bright, vibrant soup. The heat is quite high, so be careful. The most important part of cross-bridge rice noodles is the soup. Made without any additives, it's simmered for at least 5-6 hours with various bones and chicken, resulting in a savory and sweet broth. This restaurant's most distinctive feature is the use of lotus flowers, a fragrant edible scent, which can be smelled up close. The people of Mengzi taught me how to make it: First, wrap the fresh meat in a quail egg, then add the meat and egg to the soup. Then, add some cooked meat, lettuce, and finally, the rice noodles, stirring thoroughly. The enticing aroma hits you, making you salivate. The rice noodles here aren't the usual white noodles. They're tinged with pink, made from the red rice of the local Hani people, making them softer, more fragrant, and smoother. I had a large jar of chili peppers ready to add whenever I wanted. But even after I finished, I didn't have the chance to indulge in such a strong flavor. The flavor was original, rich and delicious, yet not cloying. I actually devoured a serving and a half of rice noodles in one sitting. And the cold grass sprouts. It was my first time trying them, and they were incredibly delicious. 😋 They had a texture similar to green onions, slightly crispy, but without the pungent flavor of green onions. My friend mentioned they also have rice noodles featuring grass sprouts, so I'll try that next time.
