As the chef's knife swiftly cuts through the fish, from separating the head to perfectly splitting the body along the spine, to individually dissecting, deveining, and arranging the various parts—the red meat, the middle fat, and the fat—the entire process flows with a fluidity that is imbued with power and beauty. The air is filled with the freshness of the ocean, creating not only a visual feast but also a primal anticipation and awe for the delicacy about to be tucked in.
Miso Tuna Tartare
The bone-in tuna is finely minced and tossed with Japanese miso, chives, and other seasonings. The rich, salty, and savory flavor of the miso perfectly enhances the savory flavor of the tuna without overpowering its natural flavor. Its delicate and smooth texture is perfect with crackers or eaten plain, offering a rich and complex flavor.
Tuna Carpaccio
Sliced tuna is drizzled with a specially prepared sauce and garnished with a few fried garlic slices. The tuna melts in your mouth, refreshing and appetizing. The subtle texture and burst of umami flavor are truly sublime.
Sashimi Tuna Trio
This is the highlight of the entire feast. The sashimi, medium-fatty, and fat-fatty tuna are arranged in order, forming a gradient of red.
The sashimi is the darkest, with a firm texture and a refreshing, slightly acidic flavor, representing the truest flavor of tuna.
The fat-fatty tuna, with its perfect balance of fat and muscle, is soft and smooth, rich but not greasy, making it the most accessible and enjoyable part.
The fat-fatty tuna, at the top of the pyramid, has evenly distributed, melting like butter in your mouth.
Australian M8 Wagyu Sirloin Steak & Fatty Tuna
A luxurious symphony of land and sea. The M8 Wagyu sirloin boasts stunning marbled textures, seared to a charred exterior and a captivating pink interior. It melts in your mouth, its juicy texture flowing. The accompanying Fatty Tuna Sashimi offers a cool, rich, and rich flavor. Tasting each of these, you'll experience two distinctly different "melting" experiences: one passionate and unrestrained, the other calm and luxurious. This duet of land and sea intertwines on your taste buds, elevating the entire dining experience to its peak.

9°C weather is perfect for snuggling up on the couch and enjoying something sweet, lol. I tried the Nine-Grid Afternoon Tea at the Edition Japanese Restaurant, a Jo Malone collaboration. It's a shame they don't have any gifts available right now. The desserts are arranged in a unique way, with a balanced mix of sweet and savory flavors that won't get you sick of them. At first, I thought the Christmas tree was one of those overly sweet white chocolates, but it turned out to be a yuzu curd and gingerbread cake 🫚. It's very refreshing. The orange cream strawberry daifuku is also very good! The Rooftop Bar isn't in great repair, but the view from the Japanese restaurant is truly amazing, especially the three-story floor-to-ceiling windows overlooking the Huangpu River, and the stunning triangular windows that offer a glimpse of the three-piece set. But my favorite is the combination of the white fabric sofas and teak wood at the Edition. It has a bright and energetic feel, and feels warm and cozy on a winter's day 🫖 #FacesLoveAfternoonTea #RomanticDateRestaurant #ScenicRestaurant #ShanghaiFood
This place's afternoon tea is incredible! It's been taken to the next level! [Mint] Ambience: The restaurant is located on the bustling Nanjing Road Pedestrian Street, yet offers a tranquil escape. The overall layout is wabi-sabi-inspired. From the 27th floor, you can immerse yourself in the breathtaking Huangpu River scenery, and every corner is truly photogenic! [Highlights] Recommended: I ordered their afternoon tea, which blends Chinese influences with Japanese aesthetics. The set menu includes 22 savory and sweet dishes and two drinks. Twenty of the desserts were served in wooden boxes, creating a perfect blend of exquisiteness and deliciousness—a truly ceremonial experience. Desserts included coconut strawberry panna cotta, red bean and blueberry snapper, strawberry daifuku, pistachio almond cream brioche, and a strawberry milkshake. Savory options included corn mousse, truffle and mushroom risotto croquettes, avocado and Spanish ham hand-rolled sushi, king crab seaweed salad, wagyu beef tartare and potato salad, and teriyaki foie gras. Which one is your favorite? For drinks, you can choose two of four teas and two mocktails. I opted for the black tea, which had a rich aroma and paired perfectly with the dim sum. Refills are also available. [Pin] Useful Tips: Free parking is available, making it convenient for those driving to enjoy afternoon tea. YONE Japanese Restaurant (Shanghai Edition) [Round Pin] Location: 27F, Shanghai Edition, 199 Nanjing East Road Opening Hours: Monday to Sunday 11:30 AM - 12:00 PM
🏠 Restaurant Name: YONE Japanese Restaurant 📍 Location: 27th Floor, Main Building, The Shanghai Edition, 199 Nanjing East Road, Huangpu District ⏰ Opening Hours: Monday to Sunday: 11:30 AM - 12:00 PM A new restaurant has opened at the Shanghai Modern Edition. Renowned bartender Shingo Gokan and former chef Fumio Yonezawa of Tokyo's Jean-Georges have collaborated to create a modern Japanese restaurant. Inspired by rice and incorporating seasonal ingredients, YONE offers a modern interpretation of unique cuisine paired with trendy cocktails. Australian M5 Wagyu beef marinated in white miso is grilled over charcoal, retaining its tender texture and cleverly incorporating the richness of the white miso. Paired with traditional Japanese hand-mashed egg mashed potatoes and fried potato chips, it creates a perfect balance of freshness and crispness. The Gyokuro Martini, with its subtle fruity notes and the savory flavor of Gyokuro tea, is garnished with Muscat grapes, further enhancing the beef's richness and the delicate aroma of the wine. - Chilean salmon marinated in honey sauce and Korean chili paste adds a unique flavor. Fresh egg yolk and salmon roe enrich the palate with a rich, nutty aroma. The Toasted Rice Margarita, featuring roasted rice, offers a unique nutty aroma. The Japanese yuzu and agave syrup create a sweet and sour balance, highlighting the salmon's tender texture. Spring rolls wrapped with eel and foie gras, served with a Yunnan litsea salsa dipping sauce, showcase the original flavor. The Shari Rice Gimlet, based on Aishiki rice shochu and sake, paired with rice vinegar and kelp syrup, is light and refreshing, with a perfect balance of sweet and sour. Onions form a base, complemented by tomatoes and Australian M8 wagyu beef, drizzled with sukiyaki sauce, and garnished with a poached egg and black truffle. The Yone Tomato Tree, based on Aishiki rice shochu, with tomatoes and sake adding a savory flavor, echoes the savory flavor of the wagyu beef and the aroma of the truffle. - Crispy rice wraps the Boston lobster, preserving its firmness and sweetness. The lobster cream sauce accentuates the lobster's freshness and adds a touch of flavor. The Ume Highball, with its base of barley shochu, tequila, and Hoshiko plum wine, enhanced with a touch of rice vinegar, is salted with bibimbap furikake. The slightly smoky plum highball complements the lobster's tenderness and the richness of the cream sauce. The Iberico pork belly steak, deep-fried in Japanese style, is crispy on the outside and tender on the inside. The homemade spicy soy sauce and wasabi egg yolk ooze a touch of traditional Japanese flavor. The Swirl Highball, with its base of sake and rice shochu, is infused with lemon and Italian citrus, offering a vibrant citrus flavor. #ShanghaiEditionHotel #High-QualityJapaneseFood #FoodieShunFestival #RomanticDateRestaurant #SummerFoodieExplore
