Hidden deep within this garden, SILEX truly feels like a corner of an oil painting, carefully preserved by time. I love the small private room with access to the large terrace. Climbing roses entwine the cast-iron railings, and through the arched windows, the greenery trembles like a Monet-inspired water lily pond. Princesses in gauze dresses, despite the scorching sun, capture their radiant smiles before their meals. Until Chef Kevin brings out a basket of mushrooms from the mountains of Yunnan. The scent of the wild air fills my heart. Everyone wants to hold them and snap a picture, but I long for them to land on a French plate, a romantic poem. Matsutake and clam juice elevate the briny flavor of the oysters, while charcoal-grilled crayfish and maitake mushrooms dance in a lemongrass sauce. The highlight was the "Steamed Porcini and Silver Cod" dish, a Cantonese dim sum dish embracing the elegance of French cuisine within its delicate folds. As the fat of the Iberian ham seeped into the slices of wild mushrooms, the table seemed to echo the chirping of cicadas in Provence and the rustling of pine trees during the rainy season in Yunnan. Pureblood Wagyu beef is a natural favorite for a meat lover like me, but I was captivated by the mushroom aroma of the seemingly unpretentious fried tofu side dish. The sommelier recommended a Riesling from ALSACE, its barrel notes as light as a summer breeze across the garden, perfectly complementing the richness of the soft-shelled turtle meat imbued within the morels.
