Hezha, also known as lazy tofu, is served as a special dish in many restaurants in Enshi. Zhangguan Hezha is made by boiling Hezha and adding brine until it becomes slightly dry, then adding fresh soup with pork, chicken, eggs, etc. to make fresh meat Hezha. It is named after the small market town "Zhangguan" in Xuanen.
