I met Mr. Gao Kou in Zhiting, Shenzhen a few years ago. His fluent Mandarin allowed me to fully understand the origin and story behind each piece of sushi.
From the 300-year-old ginkgo board on the tabletop to every bowl and plate picked up from Tokyo, as well as several famous paintings by the master of Chinese painting Xiao Huirong, you can feel that their team is full of details.

I don&rsquo;t need to say much about sushi. The ingredients are delivered directly from Toyosu every day, plus seasonal fresh ingredients from different places.
