Hsu's Noodles: Since 1986, Master Hsu has been hand-pulling his first bundles of noodles beside his home in Shiding. Driven by a passion for heritage preservation, he has spent over 20 years perfecting the art—from kneading and stretching the dough to transforming it into snow-white threads. This craftsmanship showcases traditional handmade culture, making his noodles a frequent winner of New Taipei City's annual Top Gift Awards and Taiwan Product Design Awards.

- Handmade noodle DIY (approx. 1.5 hrs): A guided tour with noodle-making instructions, where you'll participate in fun activities like noodle tossing and noodle jump rope. Create your own unique handmade noodles, enjoy a noodle-drying activity, and take your personalized noodles home!
- Scallion pancake DIY (approx. 1.5 hrs): With Shiding's natural high-quality water and locally handmade dough, kids can wear bamboo hats to plant and harvest scallions in the field themselves, then hand-knead the dough - both delicious and fun! New Taipei City produces pearl scallions. At Shiding, experience the full process from planting scallion seeds, kneading flour, to cooking - every step from planting bulbs to pan-frying becomes an educational adventure.
- Flowing noodles (approx. 15–20 min): Enjoy the refreshing and chewy texture of noodles flowing down with cool mountain spring water. During the activity, please use the designated chopsticks for flowing noodles and follow the rules by using serving chopsticks. Groups of five or more will have a private water channel, creating joyful memories with friends and family!
