Hatsuhana in Hakone is a soba restaurant located about a 5-minute walk from Hakone-Yumoto Station. The day I visited was a weekday lunch, but the front of the restaurant was crowded with people waiting for their names to be called. (Since it's soba, the turnover was fast!) The specialty of this restaurant is that it uses a unique method of making soba noodles using only buckwheat flour, local eggs, and wild yam. It was a hot summer day, so I ordered the Teijo soba. The rich soup, eggs, and wild yam really matched well, and the firm texture of the soba noodles was also great!
