The southern foot of the Yatsugatake Mountains in Yamanashi Prefecture is one of Japan's most famous water villages Famous for its famous sake "Shichiken" made using spring water from one of these springs, "Hakushu," Yamanashi Meijo is the only sake brewery in Hakushu Town, Hokuto City. The restaurant directly operated by the brewery is the old-style Japanese restaurant "Restaurant Daimin," built next to the brewery. By the way, the restaurant is on the second floor and the first floor is a cafe called "Nakaya Coffee." The photo shows our signature menu item, "Salmon Koji-zuke Set Meal" (1,850 yen including tax). The traditional "Salmon Koji-zuke," which is pickled for 20 days using the koji used in sake brewing, is absolutely delicious! Other side dishes also use plenty of soy pulp and sake lees, and everything from rice cooked in brewing water to miso soup is delicious and healthy. The cold water served at our restaurant is also brewing water, so it is very mellow and the water itself is simply delicious. At the sake brewery next to the restaurant, you can visit the sake brewery museum and taste Shichiken (for a fee).
