Don’t leave Kanazawa without tasting local specialties: fresh seafood at Omicho Market, savory gold-leaf ice cream on the castle grounds, and hearty Jibuni (duck and vegetable stew) at a cozy neighborhood izakaya. Best Time to Visit: April (cherry blossoms) and November (autumn foliage) offer Kanazawa at its most photogenic. Early mornings in shoulder season bring lighter crowds and mist-shrouded gardens.
