Sushi Iwamoto is located in Kitashinchi, the Omakase battleground in Osaka. Transportation is very convenient. It can be reached within 10 minutes on foot from either Umeda Station or Yodoyabashi Station. The low-key Mr. Iwamoto has made the shop selected as one of the 100 Best Sushi Restaurants in Western Japan in 2022 with his spirit of "consistently entering the soul". Compared to the sushi, I personally think that the food and drinks of the day are better. The skin of the golden eye snapper is lightly grilled to add a crispy texture with an oily aroma, the semi-dissolved shirako is served with seaweed broth to slightly neutralize the greasiness, and the monkfish liver marinated in sweet soy sauce has a smooth texture and a sweet and fragrant taste, which is also a unique dish. The nigiri sushi is very much in line with Mr. Iwamoto's steady style. The most satisfying one is the toro hand roll made by chopping up the whole toro on the spot. It is very impactful when paired with slightly sour pickles. The stewed trout and grilled eel at the end are very plump and delicious. P.S. I personally admire Mr. Iwamoto's style of being quiet and focused on cooking.
