So happy I managed to reserve this because the mountain of figs on the creme d’amandes tart base look phenomenal, and I really wanted to taste how freshly flown in, fully ripened Japanese figs are! They were super ripe by how fork-soft they felt—kind of like bananas, also in terms of creaminess, that was mixed with a similar cucumber-like mild sweetness. The custard cream was airy light so it wasn’t trying to steal the figs’ thunder and merely existed to help hold them up.
