Full of ritual! Grand Hyatt Xiamen Wuyuanwan Hotel's Fish Festival.

The Grand Hyatt Xiamen Wuyuanwan Hotel's Fish Feast was truly full of ritual, with drums and gongs leading the way as four strong men carried a huge bluefin tuna into the hotel's cafe. Several experienced chefs worked together to dissect the whole tuna, their exquisite skills and techniques a visual feast in themselves. After being broken down, the otoro, chutoro, and akami were eaten directly, incredibly fresh and tender, while some were seared, adding another layer of flavor. Some were also made into tuna tartare with baguette, a particular favorite among children. The tuna-cutting ceremony also symbolizes good fortune and a bountiful harvest, becoming an annual traditional festival at the Grand Hyatt Xiamen Wuyuanwan Hotel.
