The "China Huaiyang Cuisine Museum" is located at No. 22 Kangshan Street, Guangling District, Yangzhou City, in the Yangzhou Lu's Salt Merchant Residence covering more than 4,000 square meters.
Although there is a museum of the same name in Huai'an City, Jiangsu Province, this new museum in Yangzhou, which has only been open for two months, is more breathtaking and awe-inspiring. Each exhibition hall not only has text, pictures, physical objects, and historical materials, but also uses modern audio-visual technology to present and introduce Huaiyang cuisine in a comprehensive and three-dimensional way.
Huaiyang cuisine is known for its fresh and mild, rich and balanced, moderately salty and sweet, suitable for both north and south, and its cultural taste of "elegance, refinement, fashion, and compatibility", and is renowned all over the world. Huaiyang cuisine originated in Yangzhou and has been inherited, developed and grown in Yangzhou. It is a gem of Yangzhou's long history and culture.
It is worth mentioning that the museum has completely restored the "First Banquet of the Founding of the People's Republic" on October 1, 1949. Looking around, the table is full of dishes. Among them are Huangqiao Sesame Cake, Huaiyang Soup Dumplings, Yangzhou Crab Meat Lion's Head, Chicken Soup with Dried Silk, Stir-fried Jade Shrimp, etc., many of which are Huaiyang dishes. Behind the table is a large red lacquer screen, recreating the scene of the "First Banquet of the Founding of the People's Republic". This is also the first time that the China Huaiyang Cuisine Museum has recreated the "First Banquet of the Founding of the People's Republic". In the opposite direction of the First Banquet of the Founding of the People's Republic, the Manchu Han Imperial Feast, which originated in Yangzhou in the early Qing Dynasty, has been completely restored. The earliest Manchu Han Feast menu that can be seen today is recorded in Li Dou's "Yangzhou Huafang Record".
Compared with the bustling China Grand Canal Museum and Yangzhou Double Museum, the China (Yangzhou) Huaiyang Cuisine Museum is more quiet in the bustling city, open from 9:00 to 17:00, no reservation is required to enter the museum, and you can dine in the museum restaurant immediately after the exhibition, tasting authentic Huaiyang cuisine, the summer play recommendation index is off the charts, perhaps many local residents and tourists have not visited, under the traditional culture of people taking food as the sky, Huaiyang cuisine plays a pivotal role in all major cuisines in China, In October 2019, the United Nations awarded Yangzhou the title of "International Gourmet City", and as soon as you enter the exhibition hall, you can see the congratulatory letter formally handed over to the mayor of Yangzhou by UN officials.
