The interesting thing about them is that they handmade their buckwheat noodles without water, resulting in a chewy texture. I had the tempura soba with a side of grated mountain yam and raw egg. The taste is light on the palate and you can taste the freshness of each ingredient. As someone who appreciates clean tasting food, it was a hit for me. For those who prefer stronger flavours, fret not as they have other accompaniments to choose from. Hatsuhana in Hakone is a soba restaurant located about a 5-minute walk from Hakone-Yumoto Station. The day I visited was a weekday lunch, but the front of the restaurant was crowded with people waiting for their names to be called. (Since it's soba, the turnover was fast!) The specialty of this restaurant is that it uses a unique method of making soba noodles using only buckwheat flour, local eggs, and wild yam. It was a hot summer day, so I ordered the Teijo soba. The rich soup, eggs, and wild yam really matched well, and the firm texture of the soba noodles was also great! Hatsuhana Soba Main Branch is a popular soba restaurant that has been in business since the 1930s and is still crowded even at 2pm. I don't have any particular attachment to soba, but I went there with my husband, who is a soba fanatic. In the end, I was very satisfied! They have a wide variety of cold and hot soba, and they are all delicious, including beef, chicken, egg, and tempura. The hot chicken and egg soba are especially great, and the cold soba is chewy and exquisite.
