Eating mala hot pot is not just a meal, it’s a full sensory experience. As the bubbling pot arrives at the table, a rich aroma of chili oil, garlic, ginger, and peppercorns fills the air, instantly awakening your appetite. The broth is deep red, often split between spicy and non-spicy sides for variety, depending on your tolerance.
What makes Chengdu’s version stand out is its authenticity and depth of flavour. The base is crafted with dozens of spices, simmered to create a broth that's complex and aromatic. You’ll often find duck blood tofu, lotus root, beef tripe, and handmade meatballs alongside leafy greens and various mushrooms.
The hot pot culture in Chengdu is social and energetic. Families and friends gather around the steaming pot, chatting, laughing, and sweating through the spice together. It’s as much about the atmosphere as the food.
