The exterior looks old but the food is delicious!

About 10 years ago, this shop was bustling in front of Sako Station. At the time, it was a top-class restaurant along with Naruto's Sanpachi, which maintained its traditional taste in opposition to Tokushima ramen such as Inotani.
In the old days, the interior of the restaurant was unclean, and despite the owner's unfriendly behavior, the restaurant was always full of customers because its signature back fat, garlic, and char siu were so good that they could not compete with other restaurants.
It later closed down, and at the same time, Tokushima ramen became more popular, and it was somewhat overshadowed by new stores such as those at Todai, but it reopened just as some people were starting to get tired of Tokushima ramen, which had been popping up like bamboo shoots after a rain.
It is based on pork bone soy sauce and at first glance looks like Tokushima ramen, but you'll be surprised to see the owner's ingenuity here.
The distinctive pork bone broth smell is skillfully suppressed with garlic, creating an exquisite flavor.
Also, while the back fat floating in the bowl makes it seem like it would be very rich,
it is actually a surprisingly light soup.
It has a richness and flavor that is far superior to today's Tokushima ramen, and can be said to be exquisite.
What's more, what a thoughtful touch is that there is sauce on the table for extra servings.
If you like stronger flavors or eat it with rice, you should definitely give it a try and create your own flavor.
In addition, the interior of the restaurant is bright and clean, so it is surprisingly popular with women too.
However, one thing that has not been carried over from the previous store is the char siu.
Although it has no direct effect on the taste of the ramen itself,
the char siu at the previous store was unique.
It was thicker than the char siu of today, and I think it was a high-quality product with no fat at all.
It depends on the manager's management policy, which is keeping the price at the current level, but
how about bringing back the legendary char siu? I hope the manager puts in a little more effort in this regard.
If he does that, I'm sure he'll become the best ramen shop in Tokushima Prefecture, both in name and in reality.
