This year's theme is the rich and retro Maillard color scheme, which is warm and full of winter atmosphere. This afternoon tea consists of 15 desserts and savory foods, combining ingredients such as hazelnuts, chocolate, walnuts and foie gras, with different levels of "winter" flavor, creating an immersive afternoon experience. Some of my favorites: Angus beef tartare with French mille-feuille potatoes, Beijing's local Jingshi soy sauce is paired with selected Angus beef tenderloin, and combined with French Dijon mustard to make traditional French beef tartare, which contrasts with the crispy outside and soft inside of the potatoes, and is rich in layers. The classic rich flavor of animal fat and plant starch fills the entire mouth; Chestnut and mushroom chicken pie, which breaks the traditional French meat pie method and uses seasonal chestnuts from Huairou, Beijing, with chicken legs and mushrooms as the base flavor. The wonderful combination of Chinese and Western styles is clever and natural; Caramel orange sauce duck breast roll, the crispy outside and tender inside of the duck breast is perfectly combined with the fresh aroma of orange peel; Rosemary low-temperature slow-cooked pumpkin cheese tart, roasted over an open fire, cleverly combines the delicacy of pumpkin with the aroma of rosemary, and interprets the abundant sense of harvest in autumn and winter naturally and smoothly.
