Using seasonal ingredients from the Miura Peninsula, this course is themed around the "colors of Hayama" in each season and is served from an open kitchen. Think of the mountains and the sea through dishes that make the most of the flavors of local ingredients. It was a plan that allowed you to enjoy a full course meal that was not just delicious or visually appealing, but also enjoyed with all five senses. There were so many dishes that it took a full three hours to prepare the course, which was a shame as it took away my energy and concentration to enjoy it...
