You grate the ginger yourself and mix the amount you like with the soy sauce. The soy sauce is called "Oogiichi" from Tatsuno City, and it is very mellow. If you find the ginger soy sauce too strong, you can adjust the flavor by adding oden dashi. I ordered a colorful 5-kind oden platter and enjoyed it with the recommended craft gin and soda.
