Located on the 104th floor of the J Hotel Shanghai Tower, the Japanese restaurant "Kaminoke Tanasha" recently launched a new Kappo dining menu. Chef Sun Jie, with over 20 years of experience in Japanese cuisine, aims to create a dining experience that deviates from traditional Kaiseki, emphasizing a relaxed and enjoyable atmosphere. Diners can escape the fast-paced city life, overlooking the skyline while enjoying the transition from daylight to moonlight, savoring the moment with friends at the counter. Today, we had a casual Kappo experience, chatting with the chef while enjoying the meal. Seasonal fish like Sakuradai and Fuefuki-dai are at their prime, plump and flavorful. The evening set menu features Matsuba crab prepared in three different ways. Each dish is prepared simply to highlight the natural flavors of the ingredients. The Ikkan-style sushi was a particular favorite, with the seared fish topped with brown sugar, offering a delightful complexity of flavors in each bite. Adding to the aesthetic appeal are the traditional Kutani-yaki and Ko-Imari ware, some with a history spanning centuries, imported from Japan.
