Edo Fuji is a small shop that only opens for lunch, so there's always a wait.
I arrived around 12:30 on a weekday, and there were about 3 groups waiting in front of me, so I waited for about 30 minutes before I could enter.
But something that was a little unusual was that there were customers who had finished eating and leaving, but they didn’t call the waiting team right away.
Just in case, the person in front of me opened the door and went in, and there was an empty seat inside the store, so they only guided me there saying “Irasshaimase~”.
Maybe…
✔ The store is small, and there’s only one chef and one grandmother who’s in charge of the restaurant, so it’s probably busy!
✔ There’s a waiting area inside the store, but if there’s no one, it might look like there’s no waiting!
If you don’t know this and just wait outside, customers might not come in, so it’s better to wait a little and open the store door slightly and ask the staff about the waiting situation!
I went at 11:30 on another Monday, but all the customers who came earlier had already gone in… It took 40~50 minutes for the entire table to go around once to get in 🥺
It might be hard to wait,

Ikura has a bursting texture and salty taste when you eat it, and Uni has a strong ocean flavor and fishy taste…
That’s why I didn’t really add Ikura or Uni when I ate sushi,
