The restaurant uses carefully selected Japanese eels that have been eaten since the Edo period, raised in a farm until they are at their most delicious. They are said to be safe, secure, and of high quality, having passed rigorous inspections.
Carefully selected sake, mirin, and tamari soy sauce are slowly simmered and a special sweetener is added to create a balance that perfectly matches the rice. It has an excellent aftertaste that you will never tire of.
The rice is from Kyoto's long-established Hachidaime Gibei, and they use a carefully selected blend of rice exclusive to Unasho.
The taste and quantity are just right, making it so delicious you will want to eat it again and again. There is no muddy smell of the eel, and it has just the right amount of fat. The elegantly sweet sauce will keep you coming back for more, and you will not tire of it until the very end, and you can also savor the fragrant taste of the kabayaki.
