"Udon-ya Shinbori" is a famous restaurant that is loved by many locals for its chewy udon noodles and homey atmosphere. The handmade udon noodles have a firm texture reminiscent of Sanuki udon, and are carefully prepared every day, with a chewy texture and smooth throat feel. You can also clearly taste the wheat, and it's a taste that will have you hooked after just one try. They are also particular about the dashi, and the flavorful broth made from kelp, bonito flakes, and dried sardines further enhances the deliciousness of the udon. In addition to the standard menu items such as kake udon, bukkake udon, and tempura udon, seasonal udon variations and set menus are also popular. There is also a wide selection of side dishes such as tempura and rice balls, so you can enjoy it according to your preference. I topped my simple udon with a soft-boiled egg and chicken tempura.
