The sauce made from a combination of miso that has been left to sit for a long time to bring out the flavor is a rich, deep-flavored yet light and easy-to-drink soup. The noodles are the familiar Sapporo ramen noodles made by Nishiyama Seimen, with curly egg noodles. They are chewy and easy to swallow, and the soup clings to the noodles well. The ramen is topped with pork shoulder roast, bean sprouts, wakame seaweed, bamboo shoots, and spring onions. For an additional 150 yen, I added a well-flavored boiled egg.
